Ingredients

  • 1 kg/2lb 4oz silverside beef, cut into large pieces
  • 1 tsp plain flour
  • 2 tbsp vegetable oil
  • 2 onions, cut into chunks
  • 3 carrots, scrubbed and cut into large pieces
  • 4 sticks celery, cut into large pieces
  • 1 tbsp tomato purée
  • 300 ml/10½fl oz red wine
  • 500 ml/18fl oz beef stock
  • 2 sprigs fresh parsley
  • 1 bay leaf
  • 3 sprigs fresh thyme
  • 2 garlic cloves, finely sliced
  • 25 g/1oz butter
  • 1 tsp redcurrant jelly
  • 200 g/7oz plain flour, plus extra for dusting
  • 1½ tsp baking powder
  • 100 g/3½oz suet, shredded
  • 2 tbsp finely chopped flatleaf parsley
  • sea salt and freshly ground black pepper
