We are running into warmer weather now and so I took advantage of the colder temps to make a nice big casserole of beef that I could divide up once cooked, and freeze ahead, along with some tasty dumplings, which you can also freeze ahead
500g extra lean beef mince. Par boil the pasta for 5 mins or until slightly softened then mix with the BBQ beef sauce. Put the mix into a large casserole dish and then top with slices of mozzarella, to be sure you top with enough for your HE, weigh out 40g of light mozzarella each time and separate into 4 sections, so you know 1 section = 1 HE. 500g extra lean beef mince
My all time favourite casserole / stew is based on Jamie Oliver's Jules Beef stew, Jo had the idea of including butternut squash in his vegetables which cooks down to a satisfying mush in the gravy and not browning the meat
this tasty casserole, macaroni is layered with a beef filling made with. its simply chopped leftover roast beef mixed with some sauted onions and garlic and a small carton of finely chopped tomatoes in juice (ciro) and some seasonings

my mum's beef stew and dumplings was my favourite meal growing up. i always remember it having a lot of delicious beef and potatoes, as well as pearl barley which was fun to search for at the end
Notes If you don’t own an ovenproof saucepan or cast iron casserole dish, simply cook the stew in a regular saucepan up until it has to go in the oven and then transfer the stew into a regular lidded casserole dish before placing in the oven
