Mash with plenty of butter, add a little milk or cream & beat until light but thick & smooth (you must do this by hand & not in a machine as it will turn into a horrible slop)
We’re aiming to show how easy it is to create simple, delicious dishes that just happen to be allergy-friendly too – proving that ‘free-from’ food doesn’t have to be complicated and can be created with easy-to-find every day ingredients
So these cottagepie stuffed baked potatoes are filled with seasoned beef, carrot, onion and peas. Two of my favorites were Beef Stroganoff and Broccoli and Cheese but, of course, one could also get a more traditional spud with cheese/bacon/green onion/sour cream fixings
However, I remembered that Lorraine Pascale has a recipe for a shepherds piewith a "twist", as I am not a fan of lamb mince I added the twist of rosemaryand thyme and swapped the lamb mince to beef mince
Stir to break down the mince then add the beef or vegetable stock and the gravy browning. Return the onion and carrot to the pan with the beefand add the mushroom a& tomato ketchups, the brown sauce and the herbs
Fry until the onion is softened and a light golden colour and the vegetables have softened. The crispy topped mashed potato would be ploughed fields, the mince would be muddy fallow fields, the peas would be grass with occasional dots of white cauliflower for sheep and orange carrot tractors
Serve with your favourite vegetable, I chose mushy peas. A little vegetable oil. Cut a small slit in the pastry top and brush the pie crust with a little milk
This recipe is going to be flexible with your left overs so perfect with any left over vegetablesand if you have left over roasted parsnips or swedes then they would be great crushedwith roast potato topping
For today, the scrappy piece of paper he chose, contained a budget idea for a mince make over using Indian flavours and replacing the traditional topping with frozen ready made rostis
Your potatoes should now be ready so mash with the yogurt and herbs and top the meat mixture with it, brush with the beaten egg and 'spruce' up with a fork
