Beef and Potato Curry

Ingredients

  • 500 g/17.5oz of braising beef
  • 1400 g of baby potatoes, halved
  • 11 onion, finely chopped
  • 12 cloves of garlic, crushed
  • 12 tsp of grated ginger
  • 11 tsp of turmeric
  • 11 tbs of cumin seeds
  • 11 tbs of ground coriander
  • 11 tsp of garam masala
  • 11 green chilli, chopped
  • 14 cardamom pods
  • 14 cloves
  • 14 vine tomatoes, peeled and chopped
  • 11 cup/240ml of passata
  • 12 cups/480ml of stock
  • 1 few handfuls of spinach
  • 1 spray oil
  • 1 salt and black pepperSpray a deep pot over a medium heat with spray oil
  • 1 Add the onion and fry till softened
  • 1 Add the garlic, ginger, cumin seeds and turmeric and fry for a further few mins.
  • 1 Add the coriander, cloves, cardamom pods, garam masala and chopped tomatoes along with the beef and stir till well coated.
  • 1 Add in the , stock and passata, bring to a boil, reduce heat to low and then cover and simmer for 1 hour 30 mins. Check half way through, to see if if needs a little more stock
  • 1 Add the potatoes for the last 30 minutes of cooking time.
  • 1 Once ready Add in the spinach and stir through.
  • 1 Season as needed with salt and black pepper
  • 1 Serve with your choice of sides.
