  • 9-10 portions
  • 190 g plain flour
  • 115 g corn meal
  • half a tsp salt
  • 2 tsp baking powder
  • 40 g sugar
  • 240 ml buttermilk (or plain yoghurt)
  • 1 large egg
  • 55 g butter, melted
  • 3 tsp chipotle chilli paste
  • 2 big handfuls of grated strong cheddar.
