Banana & Chocolate LoafCake. It’s a firm family favourite, in fact I would go as far as to say it’s THE family favourite cake, often found in packed lunches (where I am told their friends go YUCK on account of how it looks) and I’m not going to lie, bananas are bought purely so they go spotty and can be turned into cake
Anyway – this month I did manage to fit in a nice fresh and light recipe for a Blueberry and Lemon cake… Summer is the perfect time for moving away from the heavy chocolatey recipes I usually do and trying something a bit lighter

Love Cake - Back to Basics over on Jibberjabber, as this is good basic bananaloaf recipe at heart. This recipe ticks all the boxes for us, using ripe bananas for the majority of the sweetness for this cake and just a touch of honey its free from artificial sugars and being full of all things that are good for you it a "super" bake

My Easy Blueberry and Lemon LoafCake. Step 1 Preheat the oven to 180 degrees and lightly grease a loaf tin. Step 9 Pour into the loaf tin and bake in the oven for 40 minutes, checking after 30. Step 12 While the cake is still hot, stab a few holes randomly around the top and slowly pour over the drizzle
My banana bread on the other hand is much more of a cake made in a loaf tin. it's a great cake and freezes brilliantly which is always handy and it's also very adaptable
In a small bowl, mash the bananas with the lemon juice and the vanilla extract then mix in the egg. I am delighted to make this cake my first post of the new year, in fact I'm a tad smug
I always buy organic fairtrade bananas as they taste so much nicer and more intensely banana than the ordinary type, combined in this recipe with one of my favourite superfruits blueberry, the resultant loaf is very moreish
I first made this cake after watching Nigel Slater (one of my favourite Chefs) make his Black BananaCake on his TV programme, Nigel Slater's Simple Suppers
