Ingredients

  • 300 g digestive biscuits (gluten free digestives work perfectly too)
  • 150 g unsalted butter
  • 2 tsp almond essence
  • 1 tsp vanilla essence
  • 4 tbsp good quality raspberry jam, plus extra for decoration (a standard jar would be enough)
  • 600 g soft cream cheese
  • 100 g icing sugar
  • 250 ml extra thick double cream
