Ingredients

  • 300 g plain flour
  • 1/2 tsp salt
  • 3 tbsp icing sugar
  • 150 g cold butter
  • 1 egg, beaten
  • 1 tsp lemon juice
  • 4 tbsp cold water
  • 100 g butter
  • 100 g caster sugar
  • 3 medium eggs, beaten
  • 150 g ground almonds
  • 25 g flaked almonds
  • 2 caps of almond essence
  • 3 tbsp raspberry jam (Ideally our homemade Raspberry jam)
  • 150 ml double cream
  • 1 vanilla pod
  • 6 egg yolks
  • 100 g sugar
  • 2 egg whites
  • 5 egg whites at room temperature
  • Pinch of salt
  • 1/4 tsp cream of tartar
  • 50 g sugar
  • 120 ml water
  • 200 g sugar
