  • 250 g Mascarpone
  • 250 g Cream Cheese
  • 65 g Caster Sugar
  • Sugar
  • 50 ml Double Cream
  • 125 ml Baileys
  • 2 sheets Gelatine
  • 100 g Unsalted Butter
  • 125 ml Double Cream
  • 1 Tbsp
  • 50 ml Baileys
  • 25 ml Vodka
  • 25 ml Espresso
  • 3 Coffee beans
  • 180 C fan
  • 6. If using individual stainless steel mousse rings, place them on a baking tray
  • 2-3 mins Drain and place in a small bowl and add
  • 1 tbsp water
