Bacon Sriracha Chicken Skewers and Coconut Rice

Ingredients

  • Coconut rice
  • 1½ cups jasmine or basmati rice
  • 1½ cups coconut milk, shake well
  • 1½ cups water
  • 1 teaspoon Sea Salt
  •  
  • For skewers
  • 1½ lbs ground chicken
  • 5 slices of bacon, cooked and chopped
  • 1 small red onion, diced finely
  • 1 clove garlic, minced
  • 4 Tablespoons parsley, chopped (2 Tablespoons reserved for garnish)
  • 2 teaspoons ground coriander
  • 1 teaspoon sea salt, 1 teaspoon pepper
  • ½ cup panko bread crumbs (use gluten free Bread crumbs if making the GF version)
  • 2 tablespoons sriracha
  • The Broccoli
  • one head organic broccoli, cut into florets and steamed
