Ingredients

  • /1 lb macaroni
  • 4-5 tbsp vegetable oil
  • 1 large onion
  • 1 tsp dried thyme
  • 1 tsp oregano
  • 1 tsp dried rosemary
  • 3 garlic cloves
  • 1 x 400g
  • 14 oz can chopped tomato
  • 1 medium Aubergine
  • /1 cup shredded mozzarella
  • 2-3 sprigs fresh basil
  • /1 cup breadcrumbs
  • fine sea salt and freshly ground black pepper
  • /3 1/2 tbsp unsalted butter
  • /6 tbsp
  • /2 1/2 cups milk
  • 1 tsp fine sea salt
  • / 3/4 cup
  • 1/4 cups grated
  • 1 teaspoon of fine sea salt
  • 20-30 minutes until very thick
  • 5-10 minutes until the top is crunchy and golden brown. Serve immediately
