This Coconut Thai Curry was the first recipe I did for the book and it’s still one of my favourites. The coconut milk makes it wonderfully creamy, while the ginger, chilli flakes, corianderand miso add a fantastic array of different flavours
But today I was full of energy and made this delicious Coconut milk chickpeas curry, if you know me you know that I love chickpeas and I cannot get enough of them
Once hot add in the curry paste and fry off for about half a minute. Dry-fry the dry spices in a wok to release the flavours and then grind to a powder in a pestle and mortar or in a processor/blender
Add the curry sauce andcoconut water (or water) if needed. ) and digging a bit deeper, I found the end of a bag of dried apricots, a few flaked almonds from a baking challenge hamper and some coconut water
But it was such an involved post I just had to suck it up and post for you anyways. Instead I regrouped and made them in rolls and baked them, which really turned out better than I thought
