I had some apples which none of my brood wanted to eat (as they were on the bruised side) so, as I've made crumble loads already, I decided to see if I could turn it into a cake
I wanted to do something with apples and cinnamon, sort of the flavours of an applecrumble, but when I know I'm going to be carrying them on the train and the underground I need to make sure it's something easily transportable that isn't going to spill, fall apart and can easily be squeezed into a tupperware

AppleCrumbleCake (adapted from Gary Rhodes' Food with Friends). That's actually good fun, and before you know it, your home will be filled with the delicious aroma of baking apples and cake
I think I prefer this to an applecrumble, as there's more cake and a lot less apple peeling to do. Lay the apples in circles on top of the sponge, then sprinkle the crumble evenly over the top
It’s sort of an applecrumble / apple pie / applecake hybrid, consisting of a layer of cake at the bottom, then a layer of spiced apples, and finished off with a crumbly streusel-like topping
Full of autumnal flavours this is perfect as the weather turns colder, I’ve bought the flavours and textures of a classic applecrumble and mixed them with an utterly amazing cheesecake…and boy does it work
