Ingredients

  • 4 cups

  • For the sponge
  • 150 g self raising flour (1 1/3 cups)
  • 50 g caster sugar (generous 1/4 cup)
  • 80 g unsalted butter, chilled and diced (5 1/2 TBS)
  • 1 medium free range egg
  • 100 ml milk (7 TBS))
  • the finely grated zest of one unwaxed lemon
  • 50 g of raisins or currants if you prefer (generous 1/3 cup)
