Add the egg, flax seeds, sour cream and lemon zest, mixing together again before finally adding the almonds, flour and baking powder and giving it a final mix
Bounty chocolate bars, the dark in particular, are a favourite coconut treat of mine, so I’ve used March’s #BundtBakers to interpret it into a bundt cake
This lovely moist almond cake is flavoured with lemon and lavender flowers from our garden. The bulk of this moist, gluten-free almond cake is made up of ground almonds and eggs, but the small amount of potato flour acts to prevent the butter and egg mixture from curdling during the preparation of the cake batter
This cake was inspired by a recent trip to Booths supermarket, where I found some lovely plum and damson goodies, which I felt would work perfectly in a bundt
Plums are everywhere at the moment. Victoria plums are so naturally sweet and juicy that they do get eaten happily in our house but it’s always good to have a baked pudding idea to use up those plums that have turned slightly squishy, as Victoria plums tend to turn very quickly
I had also discovered when tidying my store cupboards that I had eight, yes eight, packs of ground almonds hanging around (for some reason, almonds and lasagne sheets I seem to always forget I have and buy them again and again unnecessarily)
I made this on a whim, drawing on my almond-semolina-apple-oat slice recipe for inspiration, and being guided by the plums in my fruit bowl and the flours in my fridge

This month’s #BundtBakers theme was a challenge for me, the theme was alcohol. I baked this cake in one of my favourite bundt tins, the NordicWare Fleur De Lis
October’s theme for #BundtBakers is chosen by myself and I chose Beverages. I thought this theme would be so much fun and a very creative challenge to put forward to try and turn your favourite drink into a bundt cake
I used gluten free all purpose flour, soja yoghurt and almond milk to make it suitable for my gluten and lactose free diet, but you can use regular all purpose flour and milk without a problem
Here we have a dense almond laced bundt cake studded with coral flecked peach pieces, split this in half and for the filling you have a sweetened whipped cream flavoured with raspberry oil and filled with juicy ripe berries
