Ingredients

  • 6 - 8 with rice
  • 3 - 4 tablespoons vegetable oil
  • 2 - 3 garlic cloves
  • 1 teaspoon red chilli flakes
  • 1 teaspoon curry powder
  • 1 teaspoon cayenne pepper
  • 400 g tinned tomatoes, chopped
  • 400 g sweet potatoes (or butternut squash), peeled and chopped into bite size pieces
  • 200 ml water
  • 2 - 3 tablespoons crunchy or smooth peanut butter
  • 225 g spinach roughly chopped
  • 400 g tinned kidney beans, drained and rinsed)
