Ingredients

  • 1 tsp olive oil
  • 1 large onion, peeled and chopped
  • 1 TBS medium curry powder
  • 1 tsp paprika
  • 1 tsp ground ginger
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp tomato puree (tomato paste)
  • 2 tsp fresh lemon juice
  • 1/2 pint semi skimmed milk (1 cup)
  • 50 g of raisins or sultanas (generous 1/3 cup)
  • 400 g carrots, peeled and sliced (4 medium)
  • 400 g cauliflower, broken into florets (3 1/2 cups)
  • 400 g potatoes, peeled and diced (4 medium)
  • 200 g frozen peas (1 1/3 cups)
  • 1 tsp garam masala
  • 2 tsp vegetable bullion powder
  • 2 large fresh tomatoes, chopped
