Lunch, Main Dish, Salad. Cut the chicken into slices, and serve withsalad. I served my saladsansdressing, but you canaddsaladdressing of your choice and just add the calories on of course

My MondayMealPlanshave been shunted to Mid-Week MealPlanslately – but in one way, I prefer it, as I usually know what I amhaving on MondayandTuesday, but it’s the rest of the week I sometimes have issues with, and once I have been shopping at the beginning of the week I am better placedandorganised to planahead
I alwaysmakesabatch of this up alongwith my soup recipe in readiness for my two low-caloriefastdays, as it’s allpreparedandready to snack on, as well asmakingaGREAT fruity kick-startbreakfast for the start of the day
But, what is lacks in calories is more thanmade up for in tasteandflavour – sweet mintedpeas mingle withnewpotatoes, onions, garlicanda juicy ripe tomato, which areall bound with two free-range eggs…
However, it fits right into my schedule this week to fast on MondayandWednesday, which leaves the rest of the week and the weekend to have fun in the kitchen with my new cookbooks that I received for Christmas
I’m persevering, although some weeks I think I simply eat too much food on feastdays (three meals out in a row doesn’t really help if you are trying to lose weight
There is a lot to be said for anation where even the supermarkets shut for lunch, it has my fullest seal of approval, although I wasastounded to be turned away from Poitiers airport once, as it was closed for lunch – I wasadvised to enjoy aplat du jour myself at the café, until it opened for check-in
I’ve called it amade-to-measure curry, because I caneasily see how this recipe could be adapted to pretty much how every manycalories you have to spare for your evening meal
