  • 1 tsp dried thyme
  • 2 garlic cloves, chopped
  • freshly ground black pepper
  • 1 3/4 lb boneless leg of lamb, cut into bite size pieces
  • 8 - 12 bay leaves
  • Lemon wedges to serve
