Ingredients

  • 1 1/2 cups hot brewed coffee
  • 3 cups sugar
  • 2 1/2 cups plain flour
  • 1 1/2 cups unsweetened cocoa powder
  • 2 tsp baking soda
  • 3/4 tsp baking powder
  • 1 1/4 tsp salt
  • 3 large eggs
  • 3/4 cup vegetable oil
  • 1 1/2 cups buttermilk (well shaken)

  • FOR GANACHE FROSTING
  • 16 ounces good quality semi sweet chocolate
  • 1 cup heavy cream
  • 2 TBS caster sugar
  • 2 TBS golden syrup (or corn syrup)
  • 1/4 cup unsalted butter

  • ½ cup castor sugar
  • 1 whole egg, plus 2 egg yolks (save the whites for the meringue)

  • ½ tsp lemon essence
