I often hanker after tasty “fast food” types of food when I am on a diet, and although I have never really found a decent chicken kebab outside of Cyprus (or Turkey and Greece) I do love a good take-away kebab now and then
it’s great as an accompaniment to any meal, as well as being wonderful when made for the buffet table – Coronation Potato Salad - and just in time for New Year
I always makes a batch of this up along with my soup recipe in readiness for my two low-calorie fastdays, as it’s all prepared and ready to snack on, as well as making a GREAT fruity kick-start breakfast for the start of the day
Mushrooms or tomatoes on toast, as well as egg on toast is a close second, and when I saw some lovely fresh and VERY seasonal autumn mushrooms at the market the other day, I set out to prove that you CAN have your “on toast” treat on a diet, that is tasty and full of flavour
But with the start back to school for the Autumn term, my ideas turned to portable food that would be handy for anyone who wanted to lovely packed lunch on their fastdays……thissalad is an adapted recipe from an OLD Weight Watcher’s cookbook and I have added my stamp on it – it’s full of flavour, hearty and filling and I just LOVE the minty lemon dressing
Most of my family are vegetarians, (with the exception of Malcolm, my husbandand Hannah my daughter) so, this is a PERFECT supper recipe for them, served with acres of crusty bread or baguette, for FEASTdays for me of course
I am rather pleased with this recipe, not just because it is very filling and extremely flavoursome, but because my husband, who is NOT following any diet, asked if he could have some for his lunch, as the aromatic fragrance of the lemons, cumin and garlic infused the kitchen and apparently titillated his taste buds
It’s an easy recipe to make, and it is truly redolent of hot summer days, with the heavy scent of lavender and thyme, the drowsy hum of bees, the creaking of an old deck chair, the chink of ice on glass and the idea of a postprandial nap looming on the horizon
Alternatively, if you aren't on a fasting day this recipe could be taken from delicious to divine with the addition of a generous glug of olive oil and some toasted pine nuts
“If you were sticking to your fastdays, then in terms of cardiovascular disease risk, it didn’t seem to matter if you were eating a high-fat or low-fat diet on your feed (non-fast) days,” she said

Perhaps because of that, the meal we ate was relatively higher in fat and calories and even now, if I have time and space in the freezer, I much prefer using a whole chicken
I genuinely love their products so I was delighted to win a great hamper of goodies from them but rather despairing of things that I could eat on fastdays…although you might remember my cod recipe with nduja
When I am too busy to manage two days a week of fasting, I do what I can. Meal type. You can use dill, fennel fronds or the herb of your choice instead of the parsley if you prefer and of course you can play around by adding in a little ham or chorizo, skipping the tomatoesand olives or even by adding small new potatoes if you are not dieting
Breakfast. My MondayMealPlans have been shunted to Mid-Week MealPlans lately – but in one way, I prefer it, as I usually know what I am having on Mondayand Tuesday, but it’s the rest of the week I sometimes have issues with, and once I have been shopping at the beginning of the week I am better placed and organised to plan ahead
If you continually diet, you are putting your body in a quasi-famine situation. The result is a very light, fragrant dish that you can enjoy not just on fastdays
And John’s fish always arrives beautifully filleted so that all I have to do is open one of the individual portions to create my very own diet ready-meal
Meal type. Add the tin of tomatoesand about a third of the can of water. And, to pick up on an idea that one of my friends pinned for ‘creamy cauliflower sauce’
