Ingredients

  • 2 cups of dried red lentils
  • 13 tbs of Thai red curry paste - 3 syns
  • 1400 ml/1.66 cups of light coconut milk - 12.5 syns
  • 1960 ml/4 cups of chicken or vegetable stock
  • 1 fresh chopped coriander (optional)Add all ingredients to the instant pot
  • 1 Stir well
  • 1 Add lid, close valve and set to manual High pressure for 8 mins
  • 1 All the pressure to release naturally.
  • 1 Top with fresh chopped coriander (optional)
